From the humble beginnings of childhood, where overcooked sirloin from mass-market grocery stores shaped my early perceptions, to the transformative experience of savoring Olive Wagyu in Japan, my culinary journey has been a long one. This path has instilled in me a deep appreciation for the origins of our meat, the dedication of the producers, and the unique qualities of each cut.
While working at Per Se in New York, a prestigious three Michelin-star restaurant, I was inspired by seeing the exceptional quality of meat from suppliers like Snake River Farms stocked in all the fridges. This experience cemented my dedication to culinary excellence and sparked the idea of sharing this passion with the world.
I founded Modern Art Catering in Los Angeles. Then I did something insane, bought out a handful of larger catering companies and merged a few brands together, turning the company into a vertically integrated operation that served clients up and down the spectrum of catering events.
After catering nearly a decade of success, I sold my catering company to a large restaurant and food truck operation, marking my temporary departure from the food industry.
With the onset of COVID-19 and lockdowns, I found myself reigniting my culinary passion, this time in a more introspective setting. Unable to go to local markets, I turned to online platforms like Crowd Cow, which reconnected me to the intimate stories of farms across the nation. This phase reignited my obsession for meat and inspired a new venture focused on sharing these discoveries.
