The idea for Matt's Meat Review was born out of my love for exquisite beef and the desire to create a reliable, universal meat rating system. Inspired by Robert Parker's renowned 100-point wine rating scale, I envisioned a similar approach for meats—a standardized way to evaluate and appreciate the finest cuts from around the world.
My fascination with the nuances of different beef varieties began during my time as a chef. The distinct flavors, textures, and marbling patterns of Wagyu, Angus, and other breeds captivated my taste buds and fueled my curiosity. When the pandemic hit and stores closed, I began buying meat online at marketplaces like Crowd Cow. This opened my mind to both how good frozen meat can be when handled properly, and the vast world of ranchers and producers all over the world that work just as hard as wine makers to produce the highest quality flavors and experiences in the market. Since then, I've been buying meat from vendors all over the world online. I had to buy multiple freezers just to keep up with the purchases! This experience opened my eyes to the incredible diversity of varieties, flavors, and overall meat experiences available globally, and I wanted to share these discoveries with others.
